Nitrogen flushing simply means that nitrogen is vacuum pumped into the neck of the bottle after filling the bottle with oil. Flushing oil filled bottles with nitrogen protects against oxidative damage by removing the oxygen from the upper unfilled portion of the glass bottle and replacing it with inert, food grade nitrogen.
